both of whom are protégés of Celebrity Chef-Restaurateur Luke Mangan,The Botanic returns to the roots of nature, marking the next evolution in culinary culture.
Mangan’s departure from the Salt brand facilitates a platform for Chef Binnie to revolutionise dining experiences and create innovative dish combinations that stem from his Australian culinary heritage and travels throughout Asia. The move to The Botanic will also see Higgins undertaking a hands-on operational role, while working to further develop and enhance the overall dining experience at The Botanic.

A Botanical Delight

Reflecting the travels and learnings of Chef Binnie throughout the region, guests will find a repertoire of global influences with South-East Asian and Mediterranean flavours prominently expressed on the plates at The Botanic. Free-range eggs from Japan, organic honey, vegetables and grass-fed meats from Australia are sourced together with produce hand-selected daily from our local market and farmers.
